It’s a new back to school year, with an 8 year old and a 10 month old, and life is way busier than I could have ever imagined. But you know what has been saving me? Lunchbox prepping! That’s what. Here are some lunchbox prep hacks and recipes I find super helpful! Just save a little bit of time on that Sunday, and you’ll be laughing.

  1. Homemade ‘Uncrustables.’

The trick to making these is to buy a soft bread. I used a soft whole wheat bread by Natures Own Bread. Lay out each slice and spread pb and J in the center of the bread. Sub sunflower butter to make it nut free. Take a sandwich sealer, I used this one and seal the sandwich together. This will also cut off the crusts. I like to give it an extra seal by crimping the edges down with a fork.

Once done, lay them down on a sheet pan and flash freeze for a couple hours before transferring to a freezer friendly bag. These will thaw nicely by lunch if pulled out and packed in a lunchbox in the morning! Below lunchbox by OmieBox.

2. Pizza Muffins!

These pizza muffins are the best to prep and freeze for quick lunchboxes and an easy snack! I used a whole wheat English muffin and spread marinara sauce on top. I then added some cheese and some pepperoni on top. To make these pepperoni’s mini, I used a piping tip and cut them out. But this step is totally optional! Again, I like to flash freeze these for a couple hours before transferring them to a freezer friendly bag. To reheat, just place them in the oven at 350 F and bake for 10-12 mins. 3. Savory Waffles!

I made these savory waffles on the weekend and they were so delicious! You can take your favorite waffle recipe and add 1 cup of grated zucchini, (squeeze out excess moisture with a paper towel) 1/2 cup of shredded cheddar cheese, and 1/4 cup of scallions. I took a short cut and used a pancake waffle mix from Arrowhead Mills. It came out tasting fantastic. Flash freeze for couple hours and transfer to a freezer friendly bag! Reheat in the toaster in the morning before packing. Below lunchbox container by Lunchbots.
