When I think of walnut banana bread, I think of the kind I imagine my mom would have baked – IF she had baked. Specifically, the kind that would wait for me after school with the sweet smell of bananas wafting through the air. It’s the sweet taste of nostalgia, that I crave. Even if it’s only imagined. This walnut banana bread that I make reminds me of just that. And hopefully, one day, it will bring my own daughter her own nostalgic memories.
For this recipe, I used half whole wheat flour and half all purpose flour. I minimized the sugar quite a bit, but it’s still sweet enough. This version is dairy free, but we do like to eat a slice with some salted butter on top! And I added a whole lot of walnuts, and only walnuts. Because banana bread is not banana bread without walnuts in my humble opinion!
This recipe is super kid-friendly. And if they are allergic to nuts, or to make it school-friendly, you can add chocolate chips or leave it plain instead! I love cutting out a piece into a fun shape and including it into my daughter’s lunchbox as a special treat. They are also good as an after school snack!

Just Like Your Mom’s Walnut Banana Bread
Simple Dairy Free Walnut Banana Bread the whole family Will enjoy!
Notes
Eating it warm with some salted butter on top makes it extra delicious!
Feel free to add chocolate chips to add extra sweetness or decadence.
Ingredients
- 3 Ripe Bananas
- 1/4 cup of unsweetened almond milk
- 1/3 cup of melted coconut oil or avocado oil
- 2 eggs
- 1 tsp of vanilla extract
- 1 tsp of baking soda
- 1 pinch of sea salt
- 1 cup of whole wheat flour
- 3/4 cup of all purpose flour
- 1/3 cup of organic cane sugar or maple syrup ( I haven't tried coconut sugar, but I'm sure that will work too!)
- *updated: I've actually tried this with no sugar as well and added 1/2 cup of blueberries and 1/4 cup of chopped strawberries and it tasted nice and subtly sweet! I also added a few slices of bananas on top as well.
- 1/2 cup of crushed walnuts plus more for sprinkling on top
Instructions
- Preheat oven to 325 degrees.
- In a large mixing bowl, Mix wet ingredients first.
- Then add all the dry ingredients.
- Mix together, but make sure not to overmix.
- Pour mixture into a greased loaf pan and bake for 1 hr and 20 mins until toothpick comes out dry.
- Enjoy!
