When I wake up in the morning, I need a good hour (or two) before I can eat or do anything. Unless it’s coffee. But first, coffee. Right? My husband and daughter on the other hand, need to eat as soon as they wake up. I don’t know how they do that! But I’m glad they do. And this is one of their go-to breakfast staples — delicious healthy yogurt parfaits.
I like to eat these too. But for dinner. Or an afternoon snack. Yes, I like to eat dinner for breakfast, and breakfast for dinner. I’m kind of weird like that.
ANYWAY — I made a V shape cut out on the strawberry to make it into a heart. Aren’t strawberries so much more cuter when shaped like a heart? I’m clearly ready for Valentine’s Day. You will see, my posts will consistently have a heart-shaped theme going on in them, starting NOW. Luckily, my daughter loves hearts, too.
For the parfait, I used plain greek yogurt with granola, bananas, blueberries, strawberries, chia seeds and goji berries. My daughter likes the tartness of the yogurt so she can eat it plain like this. You can also drizzle a little honey or maple syrup on top for a little added sweetness.
Yogurt parfaits are seriously, one of the easiest and healthiest things you can make for breakfast or lunch. You can see a parfait bento lunchbox I made for my daughter’s school lunch, too. Additionally, you can add any kind of fruit and toppings. The options are pretty endless. Other toppings I like are: coconut, mulberries, nuts, almonds, ground flaxseeds, jam and peanut butter. So much better than buying sugary yogurt! And the greek yogurt is full of protein, too. Yay!
Oh, and I forgot to mention, I also love pomegranates on top! The crunchy consistency mixed with the creamy yogurt is sooo good.
Ingredients
- Greek Yogurt
- Blueberries
- Strawberries
- Banana
- Chia seeds
- Granola
- Goji Berries
- Honey (optional)
Instructions
- Scoop Greek Yogurt into bowls.
- Top with desired amount of toppings.
- Drizzle with honey if desired.
