What’s the best part of Thanksgiving turkey? The leftovers. Hands down. For us, leftover turkey means days of delicious turkey sandwiches covered in cranberry sauce. And what’s our favorite version? This healthy club sandwich I made today. Basically, I took the classic club sandwich and ‘healthified’ or ‘hipsterfied’ it by using turkey bacon, veganaise and sprouted whole wheat bread. And the result was this magnificent-ness.
All in all, it was to die for. Seriously. You can’t even tell that it’s healthier.
The ingredients I used are: toasted healthy whole wheat bread, leftover turkey, turkey bacon, veganaise (vegan mayonnaise), leftover cranberry sauce, lettuce and tomato. Since my 6 yr. daughter doesn’t particularly like tomatoes in her sandwiches, I put her tomatoes on the side.

I also stuck some pretty gem sandwich skewers to hold them together. Because let’s face it, pretty gem sandwich skewers make all the difference to a 6 year old.
Then, I cut them into 4 triangles. You’d be savage not to. Right?
And that’s it. Just layer all the ingredients together and cut diagonally twice, then stick the picks to hold them together. I hope you all are having delicious healthy club sandwiches today! In fact, they should call the day after Thanksgiving, National Club Sandwich Day!
