Valentine’s day is coming up. So naturally, I busted out my heart shaped muffin pans, and made these delicious – ness’. No butter, no sugar, just sweetened with bananas and strawberry — heart shaped strawberry healthy oatmeal muffins.
I found this recipe on greenlitebites, except she doesn’t add strawberries and instead uses chocolate chips. Chocolate chips are obviously so good, but strawberries are too! I made a couple other changes like adding chia seeds and using unsweetened oat milk instead. These muffins are so easy and quick to make and the best part is, they are super healthy, really tasty and a great snack or grab n’ go breakfast for toddlers and kids.
Minimal ingredients, no sugar oatmeal muffins…
This is my favorite way to eat oatmeal right now. It is so light and moist with just enough natural sweetness. I’ve made these with blueberries, raisins, carob chips, coconut you name it. It can be done.
But this Valentine’s, will be a strawberry kind of Valentine’s.
Healthy Strawberry Banana Oatmeal Muffins
Oatmeal muffins sweetened with just bananas and strawberries.
Notes
Feel free to add nuts, coconut, raisins, chocolate chips or whatever you fancy!
Ingredients
- 2 1/2 cups of rolled oats.
- 1 cup of unsweetened oat milk
- 1 egg
- 1/3 cup of chopped frozen strawberries
- 3 RIPE mashed bananas
- 1 tsp of baking powder
- 1 tsp of pure vanilla extract
- 1 tbsp of chia seeds
- pinch of salt (optional)
Instructions
- Pre-heat oven to 350 degrees F
- Mash the bananas with the rolled oats.
- Add and mix in all the rest of the ingredients, leaving the strawberries for last.
- Scoop into your muffin mold about 2/3 full and bake for 25-28 minutes.

Hi I like to try and make breakfast things overnight or in advance. How would you store these muffins? How long can they last? Can they be made in advance and I presume eaten cold for breakfast when required? How many do you normally have at one go? Sorry for the questions but I’d love to hear from you. Cheers Claire x
If for just a day or two, you can leave them in an airtight container, or you can put them in the fridge. You can also freeze these and pull them out one at a time! Thanks!

Are these very moist muffins? I baked at 375 for 25 min and when I stuck a knife in them the knife did not come out clean. It was very sticky. I baked for an additional 10 minutes and the knife still did not come out “clean”.
hmm. you shouldn’t have to bake for that long. it’s just oatmeal and fruit so if the knife doesn’t come out clean, it might be the mashed banana. try letting it sit and cool for 5 minutes and it should be a nice moist, oatmeal muffin consistency.

Could I use Old fashioned oats instead of rolled?
i don’t see why not, you should give it a try. it might change the consistency to a crunchier consistency which i don’t think

hmm. the bananas contribute to the sweetness. i would suggest maybe another fruit of your choice with perhaps some maple syrup or honey for added sweetness?

yes. the recipe I adapted from says 1 tbsp. but actually, i have tried it with a tsp. and it turned out just as good!
