Since Father’s day was coming up, I decided to ask my husband, “What do you want to do for Father’s Day?” And he answered,
“All I want to do is watch the US Open.”
“Okay.” I said. “That sounds easy enough.”
“Uninterrupted.” He added. I laughed. A deep blaring laugh.
I then asked my daughter, “What do you want to make daddy for Father’s Day?”
And she replied with the top of her lungs: “POPCORN!”
How fitting. And so to cater to both their wishes, I conjured up this:
My husband LOVES peanut butter. And he also LOVES popcorn. Hence – Peanut Butter and Honey Popcorn.
I took 1/2 a cup of popcorn and popped the corn the old-fashioned way in a pot with 2 tbsp of canola oil. (You can use olive oil as well). Just put the stove on high, wait for the first couple to pop and then move the pot back and forth quickly until the popping stops. (Push through the arm ache!) I then tossed with some salt and set aside.
To make the peanut butter glaze, I used 2 ingredients. HONEY and ALL NATURAL PEANUT BUTTER. That’s it. A 1/4 cup of honey. And a 1/4 cup of peanut butter. Stir the honey in a pot on medium, add the peanut butter and stir until smooth. (Make sure not to burn the peanut butter!) Then pour over more than 1/2 of the popcorn and mix well. Lay out on waxed paper to cool. Mix in the remaining plain popcorn with a little salt with the peanut butter popcorn.
I tossed in some mini peanut butter cups for that extra kick. (Roasted salted peanuts would be a good addition too.) But without anything also tastes great. It’s a very subtle mix of sweet and salty.
We then got to work on the popcorn bags.
To decorate, we chose a lot of blues because it’s ‘daddy’s favorite color.’ We used regular brown paper lunch bags. And used jagged scissors to cut the top.
We also had some glitter glue sticks. Foam letters and shapes. Buttons. Sequins.
Markers. Mini clothespins. Multi-colored card stock. Different patterned scrapbook paper. And glue.
Just a lot of cutting and glueing. Here’s Els!
Her favorite were the scissors and the glitter glue… Globs of glitter glue.
The mini clothespins were perfect to hold the bag closed.

I have to say, it was a real pleasure eating them. And my husband loved everything about it. Els on the other hand kept saying, “It’s my father’s day!” Meaning, she must have all the popcorn to herself.
